What does ultra pasteurized mean?

2 Answers

Pasteurization is the process of heating something in order to kill bacteria and microbes. Ultra pasteurization is doing this at an even higher temperature. It is used to increase shelf life and eliminate the need for refrigeration in some food products.

“Ultra-Pasteurized” means that the milk is heated to a minimum of 280°F for a minimum 2 seconds. This temperature and time combination is much more lethal to bacteria, killing.
